Bintulu Cincalok Shrimp Paste
It is a powerfully flavored fermented shrimp paste or relish made from tiny, whole small shrimps or krill (udang geragau).
The small shrimp are combined with salt and cooked rice in balanced proportions, then sealed and left to ferment. The rice helps drive the fermentation process while lending a distinct, slightly chunky texture.
It is rarely eaten straight from the jar. Instead, it is most commonly prepared as a fresh side dish or dipping sauce by mixing it with sliced shallots, bird's eye chilies (cili padi), and a generous squeeze of fresh lime juice to add a tangy, spicy kick.
Beyond acting as a sharp condiment alongside white rice, grilled seafood, and meats, it is frequently used as a secret flavor-booster ingredient in stir-fries (such as pork belly and cincalok stir-fry), omelets, and savory sambals.
